Chicory is a perennial plant that is found all over the world and especially in areas with mild and temperate climates. It became popular in ancient times with its therapeutic effect. Chicory contains the polysaccharide inulin, fructose, glycoside intibin (giving the characteristic bitter taste of the drink).

Method of preparation:
